Super foods fuel your body

Bean and char grilled vegetable salad

Beans are full of protein and are a great alternative to meat. Try our bean and char grilled vegatable salad which will provide you with an easy and tasty way to eat your vegies.

Ingredients (serves 4)

1 (300g) eggplant, halved lengthways
2 corn cobs, trimmed, cut into 2 cm rounds
2 medium zucchini, thick sliced diagonally
1 red capsicum, thickly sliced
1 1/2 tablespoons chopped frech oregano leaves
1/3 cup olice oil
2 x 400g cans borlotti beans, drained, rinsed
60g baby rocket
1 tablespoon white balsamic vinegar

Method

1. Place cut-side of eggplant on board. Cut each hald into 5mm-thick slices. Heat a greased barbecue plate or char grill over medium heat. Combine eggplant, corn,
zucchini, capsicum, oil and oregano in a bowl. Season with salt and pepper.
2. Char grilled vegatables, in batches, for 2 to 3 minutes each side or until tender.
Transfer to a bowl. Add beans, rocket and vinegar. Toss to combine. Serve.


Slim down secrets

Tip #1 You must make small painless changes. Take things one step at a time, slowly change your diet and adjust your exercise regime. Sudden changes will be harder to adapt to so ease into it.

Tip #2
Watch what you drink. Most people do not realise how many calories they drink each day. When you take in your calories in liquids you do not force the body to process anything.

Tip #3
Get involved with group fitness classes. Classes make exercise more exciting and fun, they work out your entire body within an hour.


Hurstville Renovation Update

The Hurstville Aquatic Leisure Centre is a month into their six million dollar refurbishment, at this point in time work is still being done to the northern car park. The renovations on the car park will result in another 100 car spaces available at the centre which should be ready in the coming weeks!
